Mislabeled product
After six weeks of ownership of this knife (Forschner 40547) I can tell you it is mislabeled. It is called a "Bread Knife," but it should be called a "Bread, Meat, Carving, Sandwich, and Other Stuff Knife." Here's how I made a sandwich a few minutes ago. Use knife to slice large rye bread.... -
Excellent Knife
Excellent knife. Well balanced and exceptionally sharp. It cuts through hard bread and soft items easily. People not used to handling large knives should consider the 8" version of this knife as it takes practice to hadle such a long cutting edge. Although the blade is very thin and a bit...

Man gets 15 years for bread knife murder
A Pacific Beach man convicted of second-degree murder for stabbing his roommate with a bread knife three years ago was sentenced Friday to 15 years to life in prison.
Ian Suazo, 24, whose family has said he suffers from mental illness, was charged in the September 2008 death of Ocie Raines, 39, who was stabbed multiple times in the face and neck. Suazo pleaded not guilty by reason of insanity, but a jury decided he was legally sane at the time of the stabbing.
Before he was sentenced in San Diego Superior Court, Suazo’s lawyers argued unsuccessfully that he should be granted a new trial, because of the manner and timing of a jury instruction on sanity given to the panel during the guilt portion of trial.
The attorneys also contended that the verdict was contrary to the law and the evidence.
Deputy Public Defender Richard Gates said in court that the jury seemed “openly hostile” to the concept of insanity and that the prosecution had argued that Suazo’s actions were the result of drugs, alcohol and poor choices, rather than his mental state.
Would you get a bread knife rehandled?
Here's an interesting question ... Would you get a bread knife rehandled? Would you view rehandling a bread knife as stupid because bread knives are silly-annoying to resharpen and you'd rather just replace it in X number of years, so why spend the $$? Or maybe you feel like bread knives shouldn't share in the sex appeal of a rehandled gyuto or suji? OR (if you're like me and a home chef), would you consider getting a bread knife rehandled because it's likely that you're bread knife is going to outlive the rest of your knives in terms of how quickly your collection turns over? Just seeing what the thoughts are out there.
Wenger Swibo 8-3/4-Inch Bread Knife
Product Description Product Description Developed specifically for butchers and chefs, the Swibo line is now available for home cooks. The knives are manufactured in Switzerland using a custom-blended steel manufactured exclusively for Wenger . This exclusive steel blend produces a high-quality, tempered, stamped blade that is resistant to wear and corrosion, and it has a 55-58 Rockwell hardness. Comfortable and ergonomically designed, handles feature a non-slip texture and an incorporated bolster to provide a secure grip. The handles are made with a non-porous Swiss polyamide, which is injection molded and hermetically heat sealed directly onto the blade. This eliminates gapping between the blade and handle and ensures that the handle is hygienically and permanently sealed to the blade. A multi-purpose tool, the 8-3/4-inch bread knife cuts through tough bread crusts and tomato peels without crushing tender insides. It's a great addition...

If it had good flavour, it was a shapeless mass with uneven crumb that shattered under the bread knife. I was beginning to suspect good bread could only be made by bakers with bionic arms and hellfire-hot ovens. Either that, or it could only be
