I'm looking for Japanese waterstones for knife-sharpening.

It has to be a physical place and not a website because I need them very quickly. I live in NYC so any big kitchen supply place that has them would be good. Any ideas?


Most hardware stores or kitchen supply stores will have them.
Look for Whet Stone. A store that sells camping goods may also carry them.
Bed Bath and Beyond will have them. Crate and Barrel as well.

Watching the Food Network television channel isn’t usually one of the luxuries of college living, but, thankfully, “Iron Chef” is coming to Columbia’s campus. Or at least the star of the show is.

On Tuesday, Oct. 3, before JJ’s Place chefs start making their incomparable curly fries and Shamrock Shakes, “Iron Chef” star, Masaharu Morimoto, will showcase his world-renowned culinary technique (no curly fries included) at Columbia’s Casa Italiana on Amsterdam Avenue (between 116th and 118th streets) free of charge.

The Donald Keene Center for Japanese Culture celebrates its 25th anniversary with an expert panel discussion–“From Gold Soup to Iron Chef: The Culture and History of Japanese Cuisine”—at 2 p.m., and a lecture/demonstration with chef Morimoto at 6 p.m.

Morimoto is known for his ability to seamlessly integrate Western ingredients into traditional Japanese dishes. How and why he does this is both a topic for the afternoon panelists and an important aspect of his evening demonstration. On “Iron Chef,” Morimoto has to work with a secret ingredient presented to him by the judges. This “secret ingredient” is his key to exploring uncharted culinary territory, while still maintaining the “tradition” of Japanese cuisine.

Then of course there's the prospect of Japan's premier punk outfit raiding the back catalogue of the Ramones...

In stark contrast to so many tribute albums, this project makes a great deal of creative sense and offers endless tantalizing possibilities. New York's punk pioneers have had so large an influence on Osaka's Shonen Knife that the Japanese all-girl trio have occasionally performed as tribute act the Osaka Ramones. In what feels like the most natural of moves, this disc revisits that concept to celebrate not only the livewire sound of America's best punk band but also the 30th anniversary of the Japanese group who could count Kurt Cobain among their fans.
