Book teaches new knife skills

We are encouraged to learn the right way to use electric tools, partly for safety, and also to get the best out of them. Buy a blender or a coffee perk, and you’ll find a manual in the box. Take a sewing course and you can expect the instructor to teach you how to use the sewing machine. There are entire books devoted to learning all the things you can do with a router.

However, when it comes to using hand tools — which in the kitchen, generally translates into “knives” — we’re on our own.

For years, I assumed that I knew how to use a kitchen knife. Then I watched a chef work. In an instant, I realized that knife skills are learned, and that good knife skills can enable you to accomplish more work, more quickly, effectively and safely, and with more finesse.

In lieu of going to the Culinary Institute of Canada, I’ve learned a bit about knife skills by watching chefs in action and asking questions. That’s not often possible though. There are no professional chefs in my kitchen.
